A refreshing, tropical ‘good for you’ juice that will cool you down on the hottest of days.

Ingredients (12)

  • 1 banana, peeled, chopped
  • 1/2 small pineapple, peeled, cored, chopped
  • 2 kiwifruit, peeled, coarsely chopped
  • 1/2 baby cos lettuce, trimmed, chopped
  • 1/2 cup baby spinach
  • 3/4 cup fresh mint leaves, chopped
  • 250ml (1 cup) apple juice
  • 330ml (1 1/3 cups) coconut water
  • 1 lime, juiced
  • Crushed ice, to serve
  • Lime slices, to serve
  • Fresh mint sprigs, to serve

Method

  • Step 1Place banana, pineapple, kiwifruit, lettuce, spinach, mint, apple juice, coconut water and lime juice in a large blender. Blend until smooth.
  • Step 2Serve the juice over ice, garnished with lime slices and mint sprigs.
